Food Tourism
The Tithe Barn, St Mary’s Priory Church, Abergavenny
Built in the 12th century, extended in the 14th century and refurbished in the 21st century – the Tithe Barn was officially opened by HRH Prince of Wales. It is a Heritage Interpretation Centre and includes a learning space and display areas on the first floor. We were commissioned by the Welsh Assembly Government to develop the ground floor into the existing Food Hall – an 80 cover restaurant, café and visitor service area offering refreshment facilities for the community and visitors to the town.
The brief included working with architects, kitchen equipment suppliers and designers to develop a showcase of Wales the True Taste award-winning food and drink. We developed a quality standards manual setting out the criteria for suppliers, menus, staffing, service, equipment etc. We prepared tender documentation to enable the client to identify suitable operators, advising the client on the franchisee selection process, providing consultancy support prior and during build and commissioning and practical advice and staff training during the contractual period to monitor standards against specifications.
