Once you’ve tasted this homemade granola you’ll never buy another packet! Serve with seasonal fruit, yoghurt or Welsh milk!

Ingredients

500g rolled porridge oats 100g hazelnuts, roughly chopped 100g coconut (optional) 75g sunflower seeds 25g sesame seeds 50g pumpkin seeds 300g clear honey 3 tablespoons vegetable oil 1 teaspoon vanilla essence 200g dried fruit such as apricots, cherries, pears, raisins, cranberries

Method

Place oats, nuts and seeds into a large bowl.  Warm the honey and oil, add the vanilla essence and pour over the dry ingredients.  Spread onto a large baking tray (or 2 smaller trays) and bake in the oven at 150ºC/gas mark 2 for 30 minutes, stirring halfway through, until golden. When cool stir in the dried fruit and serve with chilled milk or use as a topping for yogurt or fruit.  Store in an airtight container.
